Grilled Blueberry Heart

Light, healthy, and just a little bit sweet, these grilled sandwiches are a perfect breakfast.  You can use any type of bread; whole grain or wheat for healthy servings of grain or try cinnamon raisin bread for a sweeter treat.

You will need:

1.  Slices of bread (2 per sandwich)

2.  Cream cheese (2 Tbs. per sandwich)

3.  Powdered sugar (1 Tbs. per sandwich)

4.  Blueberries (Approx 3 Tbs. per sandwhich)

5.  A heart shaped cookie cutter

6.  A small amount of butter or margarine

A cream cheese filling for the blueberry breakfast sandwich 1.  Mix up the filling.  Use a fork to stir together the cream cheese and the powdered sugar until it is well blended.  Use 2 Tbs. of cream cheese and 1 Tbs. of powdered sugar for each sandwich.
Butter and filling on heart shaped bread 2.  Use the cookie cutters to shape the bread.  Butter one side of each piece and spread 1 Tbs. of filling on the other side.  Yes, you will get a little bit of butter on your hands.  If you are using a non-stick skillet, you don't need to butter the bread.
Grilling the sandwich 3.  Put enough blueberries on one piece of bread to cover it in a single layer.  Close the sandwich and put it in a heated pan.  Press down gently on the top of the sandwich with a spatula from time to time.
A browned blueberry sandwich 4.  When the bottom is lightly browned, flip the sandwich and brown the other side.
A delicious blueberry sandwich 5.  Garnish with extra blueberries and serve.  Drizzle a little maple syrup on top if desired.

The blueberry is native to North America, where wild blueberries were harvested and eaten or used for medicinal purposes by the Native Americans.  The Indians introduced the colonist to blueberries when Europeans first settled in the New World.  Today, blueberries are cultivated extensively.  The cultivated varieties are larger but less flavorful than their wild cousins.  Recent studies have show that blueberries are high in anti-oxidants and filled with beneficial vitamins.  This has made blueberries quite a popular food, although they have always been widely eaten simply because they are delicious.
